Arriba!

Tonight I made some delicious mexican food! I made an enchilada casserole with chicken seasoned with cumin and coriander, black beans, green chili peppers, red enchilada sauce, corn tortillas, a mexican blend of shredded cheese, and sour cream. I made way too much and will have leftovers forever, but it was so yummy and had the perfect amount of spice.
