For dinner tonight I used the turkey leftovers to make poached eggs with herb-roasted turkey breast and sweet potato hash
I made the sweet potato hash with roasted sweet potatoes, olive oil, sauteed onions, fresh thyme, herb roasted turkey (my leftovers), chicken broth, salt, and pepper. Then, I poached an egg in water with a little bit of vinegar. The recipe I used directed me to serve the dish with hot sauce. And, I absolutely LOVED eating this dish with hot sauce! The contrast of the sweetness of the sweet potatoes with the saltiness of the egg with the heat of the hot sauce was incredible.
